Moin Moin has always been one of my favourite dishes ever but why do the best things have to be the most tedious to make! The thought of peeling beans alone is enough to put me off but ever since I discovered how to make it from bean flour I’ve been loving life!
Moin Moin Recipe
Ingredients
- 2 small onions or 1 large onion, chopped
- 2 small bell peppers or 1 large bell pepper, chopped
- 2 scotch bonnet pepper, chopped
- 2 cups of bean flour
- 2.5 cups of water
- 2 maggi seasoning cubes
- 2 tbsp curry powder
- 1/2 tbsp garlic salt
- Pink Himalayan salt to taste
- 2 tbsp olive oil
- 150g corned beed
- 3 boiled eggs sliced
Method
- Preheat oven to 175 degrees
- Blend onions and peppers with water until smooth.
- Transfer mixture to a bowl and combine bean flour, seasonings, oil and corned beef.
- Add more salt if needed
- Transfer mixture to greased muffin tray or greased ramekins and top with egg slices and over tightly with tin foil
- Place muffin tray or ramekins in a larger tray half filled with water and carefully place in oven for 35-40 minutes
- Remove from oven and test if cooked, a toothpick should come out clean.
