Hi Guys,
I haven’t shared a recipe with you all in a while so I thought it was about time to show you what I’ve been cooking. I love pasta – it’s the perfect comfort food and it’s sooo easy to make. This was my first time ever making a creamy sort of pasta (as I usually prefer tomato-based sauces) but since I had a special request I thought I’d try something different.
Here’s what I used:
Half an egg – 6 diced tomatoes (skin peeled) – 1 diced red onion – About 2 cups of cream – 2 tablespoons of diced garlic and chilli – 1 medium red bell pepper – 8 sausages sliced – 2 teaspoons of chopped rosemary – 2 tablespoons of unsalted butter – About 3 tablespoons of olive oil – One pack of penne pasta prepared al dente – Fresh parsley – Salt, pepper and chilli powder to taste
(Honestly didn’t measure anything or follow a recipe so these are all estimates feel free to put your own spin on it)
Melt the butter in a non-stick pan and add extra virgin olive oil. Once heated, sauté onions and garlic for a few minutes until soft. Then add in in the red peppers, followed with the tomatoes. Let this sit for a a few minutes until the tomato juice has reduced. Then add in the sausages.
Once the sausages are cooked (taste test required lol) add in your cream and let it simmer on low heat for a few minutes. At this point taste the sauce and add in salt, pepper and chilli powder to your taste.
Once you’re happy with the sauce remove from the fire and mix in with your pasta, add the egg in to help bind the pasta sauce to the pasta. Allow to sit for a few minutes. Then I chopped up some fresh parsley and served it up with a salad.
Voila!

This could work with coconut milk, right? I don't like creamy foods.
Hi Berry, the consistency of cream is pretty similar to coconut milk so I'm sure it could work but it might give it a different type of taste. It's worth a try though, I love coconut milk I'm sure it'd be delicious. Let me know if you try it x
