What better time to post this then a Saturday morning?
It was my mother’s birthday last week and I decided to treat her with breakfast in bed. I had never made this before because I typically prefer sweeter foods but I tried this and it was sooooo delicious!
Here’s what I used:
4 eggs
Salt and black pepper
2 tablespoons unsalted butter
3 slices of smoked salmon
2 tablespoons of crushed feta cheese
A handful of fresh basil (but any other herb should work just fine)
In a large bowl, whisk the eggs, salt, pepper and fresh herbs. In a non stick pan, heat the butter until foaming. Pour the eggs into the pan, allow to cook for a few minutes until the edges are just firming up. Shake the pan a little so the omelette doesn’t stick.
Lay the smoked salmon and feta cheese down the middle of the omelette, fold the sides over and allow to cook for another few minutes. Gently turn the omelette over with the help of a spatula and cook for a another minute or two. (You needed to see the concentration required for this step lol)
Ease the omelette out of the pan onto a plate and enjoy.
I think I overcooked it slightly but considering this was my first time making it I was very happy with the way it turned out.
