I have another food post for you!
I’m a condiment queen. Sweet chilli sauce,ketchup, garlic mayo, barbecue sauce, mustard, peri peri sauce- anything that squeezes out of a bottle or a foil packet I basically love. But now that I’m trying to adopt a healthier lifestyle and think about what I put into my body, I’ve been obsessing over ingredient lists. Have you ever looked at the ingredients in your condiments? They’re scary! Most of them are full of sugar, modified starch (ummm??) and loads of colourings and preservatives. Not good.
So I decided to find out if I could make my own dipping sauces, starting with sweet chilli sauce. After playing around with some recipes I’ve got the perfect one and you won’t believe how easy it is. Most of what you’ll need will already be in your kitchen:
150ml water
150ml rice vinegar (or white vinegar)
6 tablespoons brown sugar
2 garlic cloves, finely chopped
1 tablespoon ginger, finely chopped
1 long chilli pepper, finely chopped
1/2 tablespoon cornstarch
Pour water and vingear into a pan and bring to a boil on a high heat for a few minutes – Stir in the sugar, ginger, garlic and chilli and allow to simmer for 10 minutes – Add a few drops of water to the cornstarch to get a paste consistency then stir into the mix quickly to thicken (you have to do this part fast to avoid clumping)
Remove from heat and allow to cool before transferring to an airtight container – Keep refrigerated and use within a week
This is honestly my favourite sweet chilli sauce, I can’t believe how easy it is and how good it tastes. The great thing about this is you can play around with the proportions to adapt it to your taste. And if you don’t like having all the bits in it you can smooth it out with a blender. If you like sweet chilli sauce you have to try this!
