It’s been a while since I put a post up on food so I’m super excited to share my first baking recipe with you. Those that know me know I love to bake, I find it so relaxing, especially with great music (current albums of choice are Miguel’s Kaleidoscope Dream and Lana Del Rey’s Born to Die). There’s nothing like the smell of something baking in the oven and some music *oh the bliss* So back to my banana bread recipe lol. I got home from work the other day to find a ripe bunch of bananas laying on my kitchen counter and decided to put them to good use. Most banana bread recipes need butter but now that I’m trying to adopt a healthier lifestyle I looked up some substitutes and found out that I could use applesauce instead so I had to try it!
To make the apple sauce you’ll need:
2 medium sized apples
water
4 tbsp cinnamon
Peel and core the apples – Put them in pot with just enough water to cover – Add the cinnamon
Allow to simmer for 15 minutes or until soft – Remove from heat and mash with a fork
I didn’t bother with getting the texture smooth since I knew I was going to whisk it up in the batter. I love the rich red colour though! Anyways now that the applesauce is done we can move on to the banana bread. Here’s what you’ll need:
Ingredients
3 large ripe bananas
2 cups all purpose flour (whole wheat flour is even better if you can find it)
3/4 cup brown sugar
1/2 cup applesauce
2 eggs
4 tbsp of cinnamon
1 tbsp baking soda
1 tsp salt
1 tsp vanilla extract
Break your bananas up and place them in a large bowl
Mash them with electric mixer on a low speed until you get a puree consistency – Stir in the sugar and let the mixture stand for 15 minutes – While you’re waiting pre-heat your oven to 200°C
Add the applesauce and eggs and mix well – Then add the baking soda, baking powder, salt and vanilla – Gradually mix in the flour, mixing thoroughly
Pour into a loaf pan. Don’t forget to coat it with cooking spray or butter first!
Bake at 200°C for 1 hour or until a toothpick inserted in the centre of the loaf comes out clean – Remove from oven and let the loaf stand for 10 minutes before removing from the pan
EAT!
This was delicious! It was moist, chewy and very banana-y. I didn’t miss the butter at all and I can’t wait to try substituting applesauce in more recipes in the future. Some chopped walnuts or chocolate chips would work well for texture. Be sure to share any variations below. Happy eating but act fast, this one didn’t last very long! Lol
