Peel and core the apple and cut it into wedges – Heat up the water, lemon juice and 1 tsp of cinnamon in a pan, add apple wedges and let steam for about 2-3 minutes – Once the water has evaporated add the maple syrup, remove pan from heat after 30 seconds – Set the apple and syrup mixture to the side – In a separate bowl whisk the eggs, coconut milk and remaining cinnamon – Heat coconut oil in a pan – Dip the bread in the mix and fry in the pan for about a minute on each side – To serve place apples on top of the french toast and drizzle maple syrup mix on the side – (Optional) Dust with icing sugar of coconut shavings if you want to get fancy!
